Sēņu gatavošana uz uguns

Sēnes uz uguns var pagatavot daudz un dažādos veidos, atliek tikai atrast sev tīkamāko. “Var cept sēņu karbonādes, kotletes, “šašliku” un pagatavot sēņu mērci,” iesaka Rimi Bērniem šefpavārs Normunds Baranovskis. Ja ir čuguna panna vai katls, to var novietot uzreiz ugunskurā vai uz grila, pamāca pavārs. Lai pagatavotu sēņu karbonādes, novārītas bērzlapju cepurītes panē, piemēram, auzu vai kviešu miltos, vai rīvmaizē un ar garšvielām sakultā olā, tad grilē uz grila restes. Tāpat uz pannas, kas novietota uz grila, eļļā var cept sēņu kotletes – novārītas dažādas sēnes smalki sagriež vai sablendē, pierīvē kartupeli vai cukini, pievieno nedaudz miltus, olu un garšvielas pēc izvēles. Sastāvdaļas samīca vijīgā masā un cep gatavas; arī kotletes var panēt miltos. Nelielas beciņas un baravikas var cept arī uz iesma, iepriekš tās viegli iemarinējot. Piemēram, tīras sēnes apviļā mīkstā garšaugu sviestā, sprauž uz iesmiem un cep uz ugunskura vai grila. Tāpat sēnes var apslacīt ar eļļu, pievienot iecienītākās garšvielas, un likt uz iesma. Vienkāršs sēņu iemarinēšanas veids ir salikt tās maisiņā, ieliet klāt marinādi, vairākas reizes sakratīt un uzreiz pagatavot. 

Jaunie kartupeļi ar gaileņu mērci

Nepieciešams:

1 kg jauno kartupeļu;

150 g sviesta ar garšaugiem;

timiāns;

500 g gaileņu;

1 ēdamk. vistas buljona (veikalos pieejams arī pudelēs);

200 ml saldā krējuma;

Pagatavošana:

Kartupeļus apsmērē ar garšaugu sviestu un satin folijā. Tos liek cepties karstās oglēs. Pannā liek sviestu un nedaudz apcep timiānu. Tad pievieno gailenes. Kad no gailenēm iztvaicējis šķidrums, pievieno vistas buljonu un saldo krējumu. Ja nepieciešams, pievieno garšvielas pēc izvēles un garšas.
